This crisp, fruity Chardonnay comes from selected French Dijon cuttings. Cool fermentation in stainless steel tank faithfully captures the essence of this fascinating grape variety as grown along the western edge of Dry Creek Valley
Rich texture, layered with a bright, fresh acidity pairs nicely with dishes containing ginger, tangerine, and Thai basil. Chicken lettuce wraps and raw foods, such as sushi, oysters, crudo, tartar, and ceviche are some of our favorite pairings with this La Nue Chardonnay.
Our vineyard lies in the western hillsides above the upper reach of the Dry Creek Valley. Benchland and mountaintop soils combine with vigor-limiting rootstock and limited irrigation to yield intense fruit flavors from smaller berries. This “La Nue” is a blend of 50% Dijon clone 76 Chardonnay from our mountaintop block and 50% Robert Young clone Chardonnay from our benchland block.
Harvest: Sept 26th and October 3rd
Fermentation: The grapes were picked in the cool mornings and immediately pressed. After settling, the clear juice was racked into stainless tank and fermented at a cool temperature to retain fresh fruit flavors. Partial (50%) malo-lactic fermentation adds roundness to the mouthfeel.
Cooperage / Aging: The wine was aged for 4 months in stainless steel tank.
