From the "Wild Hills" of our estate, the wine expresses the concentrated "sauvage" flavors from grapes grown in the red soil at the uppermost edges of the vineyards. Dense layers of dark plum and blackberry on the palate, with notes of dark chocolate and spice. A special blend of 56% Syrah, 32% Zinfandel, and 12% Petite Sirah.

Aged for 20 months in tight-grained French oak barrels (35% new).
Fermentation
The grapes were crushed into small fermenters. After cold-soaking for three days to extract deep color, the must fermented on the skins for three weeks to obtain a richly extracted wine.

This "Coteaux Sauvages" expresses the concentrated "sauvage" flavors that are produced from grapes grown in the red soil at the uppermost edges of our estate. The Syrah, Zinfandel, and Petite Sirah are all from hillside blocks where the light soils allow the vines to make grapes of distinctive concentration.

Big and powerful, this would most wisely be enjoyed with food such as cassoulet, beef stew, french onion soup, braised beef shortribs or Moraccan Lamb barbeque.
