Aging
Aged for 22 months in French oak barrels (50% new). Eight barrels were individually selected for the optimum expression of flavor and structure for this blend.
Fermentation
The grapes were crushed into small fermenters. After cold-soaking for three days to extract rich color, the must fermented on the skins for three weeks to obtain a richly extracted wine.

This elegant, structured and balanced Deux Terres provides rich, concentrated aromas of black currant, plum and dark chocolate and, on the palate, layers of black cherry, black currant, an plum.

This Deux Terres is created from a selection of the very finest lots made from our mountain-top and benchland vineyards.
Food Pairing Notes
Deux Terres is great with chocolate. It also pairs well with entrees such as braised short ribs or king trumpet mushrooms and would be complemented by strong cheeses such as Stilton or aged cheddar.
