Aging
The cuvée was bottled with a dosage of special sparkling wine yeast and allowed to ferment. Aged for 14 months “on the yeast” in bottle, the wine develops the classic rich texture and refined “sparkle” that comes from this “Methode Champenoise” technique.
Fermentation
Fermented in stainless steel tanks at cool temperatures to retain the fruit flavors. No malo-lactic fermentation.

Tasting Notes
This Sparkling Brut has delicate floral and peach aromas. On the palate it's round and creamy, with elegant flarvors and well-balanced crispness.
Vineyard Notes
The grapes used to make this Brut sparkling wine are all picked in 2018 from our estate vineyard at Michel-Schlumberger.
Food Pairing Notes
A perfect and luxurious pairing with freshly shucked oysters, caviar, and other elegant seafood. Also delicious with little madeleines or financiers (little almond cakes) at a garden party.
