Tasting Notes
Aromas of concentrated blackberry and briar with notes of vanilla and spice, deep ruby in color, and a palate filled with rich layered blackberry flavors, a dense structure, and long blackberry finish.
Vineyard Notes
This COCHONS SAUVAGES BLOCK Zinfandel is a grown in the thin red soil of our small vineyard block at the top of Bradford Mountain. Four best barrels were selected for an optimum blend of concentrated dark fruit flavor, well-structured tannin and lush mouthfeel.
Production Notes
The grapes were crushed into small fermenters. After cold-soaking for three days to extract rich color, the must fermented on the skins for three weeks to obtain a richly extracted wine.
