This crisp, fruity Chardonnay faithfully captures the essence of this fascinating grape variety. La Brume, French for fog, refers to the morning mists that blanket our cool, steep hillside vineyards located at the western edge of the Dry Creek Valley, 17 miles from the Pacific Ocean.
Rich texture, layered with a bright, fresh acidity pairs nicely with dishes containing ginger, tangerine, and Thai basil. Chicken lettuce wraps and raw foods, such as sushi, oysters, crudo, tartar, and ceviche are some of our favorite pairings with this La Brume Chardonnay.
Our estate vineyard lies in the western hillsides above the upper reach of the Dry Creek Valley. Benchland and mountain-top soils combine with vigor-limiting rootstock and limited irrigation to yield intense fruit flavors from smaller berries. A blend of clones (Robert Young 17, and Dijon 76) adds complexity and structure along with floral and mineral notes.
Harvest: Sep 26th-Oct 3rd, 2018
Fermentation: The grapes were picked in the cool mornings and immediately pressed. After settling, the clear juice was racked into French oak barrels and fermented at a cool temperature to retain fresh fruit flavors while gaining roundness during barrel fermentation. This wine is made with 100% malo-lactic fermentation.
Cooperage / Aging: The wine was aged for 10 months in French oak barrels (25% new).
