To create each Platinum Collection wine we start in our vineyard by selecting individual rows of vines which consistently produce the finest grapes. These vines receive meticulous care at every stage from pruning to harvest. The same precise care is given to each wine during fermentation, aging and blending to procude the absolutre best expression of our estate Cabernet Sauvignon.
This wine has black cherry, blackberry, and sweet tobacco aromas, densely structured tannins, and an opulent dark fruit finish.
This PLATINUM COLLECTION Cabernet Sauvignon showcases the depth of flavor that our estate vineyards can produce. Ten barrels of Cabernet Sauvignon were selected from our best areas of our benchland and mountaintop blocks for optimum flavor expression. A small amount of our hillside Petit Verdot adds elegant highlights and complexity to this wine.
Harvest: October 11th to 17th, 2017
Fermentation: The grapes were crushed into small fermenters. After cold-soaking for three days to extract rich color, the must fermented on the skins for three weeks to obtain a richly extracted wine.
Cooperage / Aging: Aged for 21 months in finest “tight-grain” French oak barrels (70% new).
