The cool marine climate and distinctive soils of the Sonoma Coast work in harmony to produce wonderful flavors in Pinot Noir grapes. In this wine, aromas of fresh raspberry and bright cherry follow through with a rich palate and elegant finish.
This wine is made from a blend of Dijon clones grown at two different vineyard sites in the Sebastopol Laguna and Carneros areas of the Sonoma Coast appellation. The flavors of these grapes are richly concentrated by the long cool growing season.
Harvest: Average brix: 24.4 pH: 3.56 TA: 0.63 g/100ml
Fermentation: The grapes were crushed into small open top fermenters. After cold-soaking for three days to extract rich color, the must fermented for two weeks to fully develop the mouthfeel and palate. After fermentation, the wine was gently pressed out, settled, and racked into barrels.
Cooperage / Aging: The wine was aged for 8 months in French oak barrels.
