Vineyard Notes

This Cochons Sauvages Block  Zinfandel is a grown in the thin red soil of our small vineyard block at the top of Bradford Mountain. Four best barrels were selected for an optimum blend of concentrated dark fruit flavor, well-structured tannin and lush mouthfeel.

Harvest:        September 15th, 2014

Production Notes

Fermentation:  The grapes were crushed into small fermenters.  After cold-soaking for three days to extract rich color, the must fermented on the skins for three weeks to obtain a richly extracted wine.

Cooperage / Aging:  Aged for 17 months in French (one new and three 1-4 year old) oak barrels.

Color:  dark ruby

Aromas:  concentrated blackberry and briar with notes of vanilla and spice

Palate:  rich layered blackberry flavors, dense structure, long blackberry finish
